Cranston’s Dry Cured Smoked Streaky Bacon works perfectly in this roasted butternut and feta salad! Ingredients: 8 rashers of Dry Cured Smoked Streaky Bacon 100g Feta Cheese 1 Whole Butternut Squash 1 Shallot 2 Sprigs of Rosemary 1-2 Bags of Mixed Baby Leaf 10g Pumpkin Seeds White Wine Vinegar Rapeseed Oil 2 tbsp of Granulated Sugar 1 tsp of Dijon Mustard 1) Prep your butternut into small pieces and place on a baking tray with some oil and some rosemary and pop your bacon on a separate tray and put into a 200°c preheated oven. 2) Remove bacon after 15 mins (or when crispy) and leave to cool. Once cool break into pieces. 3) Slice your shallot into rings. In a small pan, add around 100ml white wine vinegar and 2 tbsp of granulated sugar and bring to boil then add the shallot rings and take the pan off the heat, leave to lightly pickle and cool. 4) After 20-25 mins remove your butternut and leave to cool. 5) Whilst waiting for the butternut to cool, whisk up 1 tsp of Dijon mustard with 2tbsp of white wine vinegar and 3 to 4 tbsp of oil to make your salad dressing. 6) Assemble and mix in your leaves, bacon, butternut, shallot rings and dressing. Then top with crumbled feta and pumpkin seeds.

We are extremely grateful to all our team for working so hard throughout the COVID-19 crisis. This week it's our turn to say a big old THANK YOU to our Hexham team 🙌 The team at Hexham have been working so hard to keep the Hexham community supplied. They've been delivering where they can to those who are self isolating whilst keeping the shop running. It's been a crazy busy time for them but they have kept smiling throughout 👌 A real big thank you to you all, including you camera shy ones! 😄

Cranstons are proud to work closely with trusted local farmers. You can buy our meat knowing it has been reared ethically with very few food miles. Our short local supply chain is less vulnerable to product shortages so we have managed to keep strong availability on meat throughout the COVID-19 crisis. Mark and Rachel Dodgson from Spital Farm, near Kendal (pictured) are just one of the farming families who have supplied us throughout the current national crisis.

Spring Lamb is back! Here’s a super easy & seasonal alternative to your Sunday lunch... a Spring Lamb Chop & Asparagus ‘Tray Bake’ #lamb #spinglamb #cranstons #butchers Ingredients: 600g New Potatoes 200g British Asparagus 100g Frozen Peas 4 Cranstons Spring Lamb Chops Fresh Rosemary 2 Cloves of Garlic Olive or Rapeseed Oil 1. Pre-heat your oven to 200°c. 2. Half your new potatoes and boil for 10 mins & drain. Once drained crush your potatoes, this makes them crispy when baking. 3. Add your lamb chops to a large frying pan on a medium to high heat, just brown the chops on all sides cooking with a splash of oil and a sprig of rosemary. 4. Add your chops & new potatoes to an oiled baking tray with two crushed cloves of garlic & some sprigs of rosemary. Season with salt & pepper then roast for 20-25 mins. 5. Take your tray out of the oven, add the asparagus spears & peas then roast for a further 10-15 mins until your asparagus is cooked and potatoes are crisp. 6. Serve immediately... why not add a spoonful of mint sauce on the side.
